I am so blessed to have had my mom staying with us all summer. With three young kids, including one who broke her leg the last week of school, I don’t know how I would have made it all summer without her. (Love you, Mom!)
Our kids start school tomorrow, so mom and I spent quite a few hours today stocking up on a few items to have for breakfast, lunches and/or after school snacks. We will continue to stock up the rest of this week, but here is what we made today:
Ham & Cheese Muffins. I froze 18 of these and we munched on the rest. I had never made these before, but they turned out pretty good. Next time I will add some seasoning, as they were a little bland. These would be a quick and easy snack or even breakfast item.
Sausage & eggs. Two dozen scrambled eggs + 1 lb of sausage = quick and easy breakfast burritos. Yay! I keep this in the fridge and we are able to eat off of it for a few days. I did this last year and it worked really well for those days when we were just tired of cereal and oatmeal.
Mini Pizza Meatloaves. This recipe made 14 mini meatloaves. I had never made these before and they turned out amazing! This is definitely a recipe that I will make again. In fact, I may even make a full size version of this, to have for dinner!
Chick-fil-A Bites with Honey Mustard Dipping Sauce. We decided to make these for dinner (another new recipe for me) and they were really good. We made extras so that the kids could take them for lunch tomorrow. Because that’s how we roll. 🙂
Lunches are made, clothes are picked out, kids are in bed (of course they probably won’t sleep tonight, due to anxiety and excitement). I think it’s time to relax and get ready for the crazy morning we will have tomorrow. 🙂
